    cups zucchini- sliced

  • 4

    cups onions- quartered

  • 2

    red peppers- chopped

  • 2

    green peppers- chopped

  • 2

    carrots- chopped

  • cup vinegar

  • cup white sugar

  • 1

    tsp turmeric

  • 1

    tsp celery seed

  • cup mustard seed

  • cup pickling salt


Grind zucchini, onions, peppers and carrots in a food processor til coarse. Drain off excess liquid. Place mixture in a large plastic bowl and add pickling salt. Let stand overnight. Drain and rinse well. In a large pot, add vinegar,sugar,turmeric,celery and mustard seed and bring to a boil. Add vegetables and bring to a low boil, simmer for 30 minutes. Ladle into hot jars and screw on hot lids and rings. You must have very hot jars and lids since you don't use a canner. Makes 5-6 pints
