Ingredients
- 1 cup (250 ml) water
- 1/2 cup (125 ml) sugar
- 1 cucumber, chopped
- 1 1/2 cups (375 ml) freshly squeezed lemon juice (about 6 lemons)
- Water, club soda, or seltzer to taste

Step 1
Combine the water and sugar in a small saucepan over moderate heat and bring to a simmer, stirring to dissolve the sugar. Refrigerate until cool, at least 30 minutes. Meanwhile, process the cucumber in an electric blender or food processor until mashed to a pulp. Place in a fine strainer and collect the liquid in a small bowl - you should have about 2/3 cup (160 ml) of the cucumber juice. Combine the sugar syrup, lemon juice, cucumber juice, and water to taste in a pitcher and serve cold or over ice. Serves 4 to 6.
