Cucumber and Pepperoncini Salad
Zoned - adjust quantities to get the right amount of carbs & also count the Feta cheese as part of your protein. It is a must to use the feta cheese though, it is very yummy.
- 4 cups English cucumber, chopped (1C)
- 1 1/2 cups red onion, chopped (1C)
- diced pepperoncini
- Feta Cheese
- almond oil or olive oil
- pepperoncini liquid, from jar
- salt & pepper
Combine cucumbers, red onions, and pepperoncini in a large bowl.
Combine oil, pepperoncini liquid and salt and pepper in a small bowl, mix well.
Pour dressing over salad & sprinkle with Feta cheese. If counting proteins, use the appropriate amount.
