Ingredients

  • Frosting:
  • 1 C butter, softened
  • 1 1/2 C sugar
  • 2 eggs
  • 1/2 C. plain yogurt
  • 1 tsp. vanilla
  • 2 1/2 C. flour
  • 1/4 C. baking cocoa
  • 1 tsp. b. soda
  • 1/2 tsp. salt
  • 2 C. shredded zucchini
  • 2/3 C. chocolate chips
  • 1/2 C. peanut butter

Step 1

In bowl combine dry ingredients, and set aside.In large bowl, cream butter and sugar until light & fluffy. Add eggs, one at a time, beat well after each egg. Beat in yogurt and vanilla. Add dry ingredients to creamed mixture. Stir in zucchini. Pour into a greased 9x13 pan. Bake at 350* for 35-40 minutes or until a toothpick inserted comes out clean. For frosting, in a small sauce pan combine chocolate chips and peanut butter. Cook & stir over low heat until smooth. Spread over warm brownies. Cool.
