  • 2 large potatoes, sliced or chopped
  • 1 large onion, divided into rings or chopped
  • 1 can evaporated milk
  • 1 can Cream of Mushroom soup
  • 1/4 cup butter, melted
  • salt
  • pepper
  • 1 cup grated Cheddar Cheese, optional

Preparation

Step 1

Preheat oven to 350 degrees. Grease casserole dish. Layer one half of potatoes and onions. Combine soup, evaporated milk, and butter. Spread one half of soup mixture over layer of potatoes and onions. Sprinkle with salt and pepper. Add remaining potatoes and onions. Top with remaining soup mixture and sprinkle with salt and pepper. Cover and bake for about 1 hour or until potatoes are tender.

Variation: Top with 1 cup of grated cheddar cheese about 5 minutes before removing from oven.
