Carrots with Ginger Lime

Ingredients
- 3 cups water
- 1 1/2 teaspoon salt
- 3 pounds carrots, cut diagonally into 1/4 inch slices
- 3 tablespoons unsalted butter
- 2 teaspoons honey
- 2 tablespoons fresh lime juice
- 1 tablespoon grated lime rind
- 1 tablespoon minced fresh ginger
- lime slices for garnish

Preparation
Step 1
In a saucepan bring the water to a boil, add salt and carrots. Lower heat and simmer, uncovered, until tender but still crisp, about 8 minutes. Drain and return carrots to the saucepan.
Meanwhile, in another saucepan, melt the butter, add the honey, lime juice, lime rind, and ginger and slowly bring to a boil. Remove from heat.
Pour sauce over carrots. Warm over low heat, stirring constantly, until carrots are glazed, about 2 minutes.
Garnish with lime slices.
