Broiled Salmon with Sun-Dried Tomato and Lemon Speghetti

  • 1 lb. Angel Hair Pasta
  • 1/2 Cup Extra Virgin Olive Oil
  • 1 Cup Diced Red Onion
  • 3 Cloves of Garlic, 1 tbs. minced
  • 2 tsp Lemon Zest
  • 1/2 tsp Crushed Red Pepper
  • 1 Cup Tomato Sauce
  • 3/4 Cup Sun-Dried Tomatoes in Olive Oil
  • 2 tbs Olive Oil
  • 4 (6-ounce) Salmon Fillets
  • 2 tsp Essence
  • 2 tsp Oregano Leaves (chopped)
  • 2 tbs Lemon Juice
  • 1/2 Cup Grated Parmesan
  • 2 tbs Chopped Parsley



Step 1

Preheat Broiler
Cook Pasta
Heat a 14" skillet to a medium heat
Add 1/4 Cup Olive Oil
Add Onions and Garlic. Cook 3-4 minutes
Add lemon zest, red pepper, tomato sauce, and sun dried tomatoes
Add 1/2 Cup of water from pasta (optional)
Season with Salt and Pepper while stirring often

Line a half-sheet pan with foil and drizzle with olive oil
Slice salmon into 1/2" slices and season with essence
Sprinkle oregano and lime juice, 1/4 cup of extra virgin olive oil, and minced garlic
set under broiler and cook 2-3 minutes (lightly caramelized)
Mix with pasta and sprinkle with Parmesan and parsley.
