Shrimp with Artichokes

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 1 8-ounce (225 g) artichoke hearts, drained and quartered
  • 1/2 cup (125 ml) Italian seasoned bread crumbs
  • 2 Tbs (30 ml) chopped fresh parsley
  • The juice of 1 lemon
  • 1/2 cup (125 ml) butter, melted
  • 1/4 cup (60 ml) freshly grated Parmesan or Romano cheese


Servings 4


Step 1

Place the shrimp and artichoke hearts in a greased 9x13-inch (23x32-cm) baking dish. Sprinkle the bread crumbs and parsley over the shrimp and artichokes. Sprinkle with the lemon juice and melted butter and top with the grated cheese. Bake in a preheated 375F (190C) oven until the cheese and bread crumbs are lightly browned, about 10 minutes. Serves 4 to 6.
