Coconut Pumpkin Bread

Everyone loves this bread. If you don't care for coconut, use vanilla pudding mix.

Ingredients

  • 5 eggs
  • 1 can pumpkin
  • 2 cups sugar
  • 1 1/4 cups vegetable oil
  • 3 cups flour
  • 2 pkg. instant coconut pudding mix, dry
  • 1 tablespoon cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon nutmeg
  • 3/4 cup chopped nuts (walnuts or pecans)

Preparation

Step 1

In large mixing bowl, beat eggs and pumpkin until smooth. Add sugar and oil; mix well. Combine flour, pudding mix, cinnamon, baking soda and nutmeg; add to pumpkin mixture. Stir in nuts.

Pour mixture into 3 greased and floured 8x4x2" loaf pans. Bake at 350 degrees for 60-65 minutes or until toothpick comes out clean.

Cool 10 minutes before removing to racks to cool.
