Spicy Rum Garlic Shrimp

Ingredients
- 1 lb. of peeled and deveined large shrimp
- 3 cloves of garlic, minced
- 1/2 t fresh cilantro, chopped
- 1 small hot pepper, seeded and chopped
- 2 T corn oil
- 2 oz dark rum
- pinch of salt

Step 1
Method
In a skillet, heat oil over medium high heat.
Add garlic, cilantro, and pepper and sauté for 30 seconds, being careful not to allow the garlic to brown or burn.
Add the raw shrimp and sauté until they turn pink, about 3 to 5 minutes over medium heat.
Add rum to hot pan and tilt to flame (on gas stoves only - use a match to light otherwise, and allow to flambé until the flames die down (1 minute). Serve immediately and be prepared to make more.
