Ingredients

  • 3 fresh pears, peeled
  • 3/4 cup brown sugar
  • 1 tsp. pumpkin pie spice
  • 1/2 cup dried cranberries
  • 1 2-layer pkg. golden yellow cake mix
  • 1 pkg. vanilla instant pudding mix
  • 4 eggs
  • 1 1/4 cups water (milk will make a richer cake)
  • 1/4 cup oil
  • whipped cream

Preparation

Step 1

Preheat oven to 350 degrees. Grease and flour bottom of 13 x 9 inch pan.

Cut pears lengthwise in half; remove cores. Cut each half, lengthwise in ¼ inch slices.

Line the bottom of the pan with the pears. Mix the sugar and spice and sprinkle over top of the pears. Top with berries.

In mixer, combine the cake and pudding mixes. Add the water/milk and beat well; add eggs one at a time and oil.

Pour mixture over the pears and bake in 350* oven for 35 minutes or until done.

Cool for 10 minutes. Run knife around the edge of the pan and gently invert onto a large platter.
