6 Mushroom Soup

  • 1 onion (peeled and finely diced)
  • 2 cloves garlic
  • sprig fresh thyme and tarragon
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 3 cups mixed mushrooms
  • 4 cups vegetable broth
  • salt & pepper
  • splash balsamic vinegar



Step 1

Saute onion, garlic, thyme, tarragon, olive oil and butter (2-3 minutes - medium heat). Add mushrooms and simmer (4-5 minutes) until nicely wilted. Add vegetable stock. Simmer 15-20 minutes. Puree in blender (lightly). Add drizzle of vinegar and serve.
