Ingredients

  • 10-12

    large sweet potatoes, whole

  • 1

    20 oz. can crushed pineapple, drained

  • 1-¼

    cups sugar

  • 6

    T. butter, melted

  • 3

    eggs

  • 2

    t. salt

  • 2

    t. ground cinnamon

  • ¼

    t. ground allspice

  • ¼

    t. ground nutmeg

  • TOPPING:

  • ½

    C. brown sugar

  • 2

    T.butter, melted

  • C. all purpose flour

  • 1

    C. pecans or walnuts, chopped

Directions

Preheat oven to 375. Lightly grease a 9" x 13" baking dish. In the oven on a cookie sheet, bake sweet potatoes whole until soft (approx. 45 min.) Remove skins,cut in half and quarter. With an electric mixer, mix sweet potatoes, crushed pineapple, sugar, butter, salt, and spices. Stir in one egg at a time. Pour into baking dish. Mix topping ingredients together and sprinkle over top of the casserole. Reduce heat in oven to 350. Bake 35-40 minutes at 350 degrees.
