Asparagus with Shallots

  • 2 lbs asparagus, trimmed
  • 1 tbs butter
  • 2 small shallots, finelt chopped (1/4 cup)
  • 3/4 tsp salt
  • 1/4 tsp pepper

Step 1

In a 12 inch skillet, heat 1 inch water to boiling over hight heat.
Add asparagus; heat to boiling, and cook 3-5 minutes or until tender-crisp.
Drain asparagus; rinse under cold running water to stop cooking and drain again.
Cover and refrigerate asparagus up to 1 day.
Just before serving, in the same skillet, melt butter over medium heat.
Add shallots, salt and pepper, and cook for 2 minutes or until softened, stirring.
Add asparagus and cook for about 2 minutes longer or until heated through (longer if cooked ahead and chilled), shaking skillet to evenly coat asparagus.
