Fresh Roma Tomato and Cucumber Salsa

Ingredients
- 2 lbs Roma Tomatoes, seeded and chopped into large chunks
- 2 C Mini Cucumbes, diced
- 1/2 C Red Onion, finely chopped
- 1 T Garlic, chopped
- 2 Jalapenos, stemmed, seeded and chopped
- 1 T Olice Oil
- 1 T Red Wine Vinegar
- Juice of 1 Lime
- Salt
- 1/4 C Fresh Cilantro, chopped

Preparation
Step 1
In a medium bowl, combine tomatoes, cucumbers, onions, garlic and jalapenos. In a small bowl, beat oil and vinegar with a whisk or fork until well emulsified. Add lime juice, salt to taste and cilantro. Pour the dressing over the tomato mixture and toss thoroughly. Chill for 30 minutes before serving. Serve with tortilla chips.
