  • 3/4 cup dark rum
  • 12 Tbsp. (1-1/2 sticks) unsalted butter
  • 1/3 cup light brown sugar
  • 1 ripe pineapple, peeled, cored, and sliced into 1/2''-thick rounds
  • Vanilla ice cream to serve on the side
  • 1/2 cup fresh blueberries

Directions:

Combine the rum, butter, and sugar in a small saucepan and simmer, whisking often, for about 10 minutes or until the sugar has melted and the mixture is slightly thickened.

Preheat your grill to high. Place the grill pan on the grates of the grill and allow it to get hot. Grill the pineapple slices, brushing them frequently with the glaze, for about 2—3 minutes per side or until browned.

Transfer the pineapple to a platter or serving plates and top each slice with a scoop of vanilla ice cream. Garnish with a few fresh blueberries. Serve immediately.
