Ingredients
- DRESSING:
- 1 1/2 tablespoon honey
- 3 tablespoon lime juice (about 2 small limes)
- 1 1/2 tablespoon extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- SLAW:
- 3 cups julienned (long thin slices) jicama
- 2 large Fuji apples, cored and cut into thin strips (about 2 cups)
- 1 cup julienned carrot
- 1/3 cup dried cranberries
- 1/3 cup chopped fresh parsley or cilantro

Preparation
Step 1
To make the dressing, in a small microwavable bowl heat the honey for 5 seconds, just until runny. Remove from the microwave, add the lime juice, oil, salt, and pepper and which until mixed.
For the slaw, in a large bowl, combine the jicama, apples, carrots, cranberries, and parsley or cilantro. Pour the dressing on top, and toss together to coat.
Cover and place in the refrigerator.
Serve chilled.
