Berry Delightful Spinach Salad

Ingredients

• DRESSING:
• 1/2 c. sugar
• 1 c. chopped pecans
• 1 pkg. (6 oz.) baby spinach
• 2 c. strawberries, sliced
• 1 c. fresh blueberries
• 1/4 c. balsamic vinegar
• 2/3 c. fresh strawberries
• 1 tsp. sugar
• 3/4 tsp. onion powder
• 1/2 tsp. salt
• 1/4 tsp. pepper
• 2/3 c. olive oil

Preparation

Step 1

1. In a small heavy skillet over medium-low heat, cook sugar until it begins to melt. Gently drag melted sugar to the center of pan so sugar melts evenly. Cook, without stirring, until sugar is dark reddish brown, about 15 min.

2. Remove from the heat; stir in pecans. Pour onto a foil lined baking sheet; cool completely. Break pecans apart if necessary.

3. In a salad bowl, combine the spinach and berries. Place the first six dressing ingredients in a blender; cover and process until pureed. While processing, gradually add oil in a steady stream.

4. Just before serving, drizzle the salad with dressing. Top with sugared pecans.
