Ingredients

  • 2 pkgs Oriental flavored ramen noodles
  • 3 eggs, beaten
  • vegetable oil
  • 3-4 green onions, thinly sliced
  • 1 carrot, peeled and grated
  • 1/2 c frozen peas
  • 1/4 c red bell pepper, minced
  • 2 Tbs sesame oil
  • soy sauce

Preparation

Step 1

Boil noodles til soft,w/out flavor packets,drain and set aside.
Heat 1 Tbs oil ,cook eggs til done,set aside.
Heat 1 tsp oil over med.
Cook and stir onions in oil for 2-3 min,til soft,remove from pan + set aside.

Heat another tsp oil in the same skillet,cook and stir the the carrots, peas, and peppers separately,setting each aside when done.

Combine 2 Tbs sesame oil with 1 Tbs vegetable oil in a separate skillet or wok.
Fry noodles in oil for 3 to 5 min over medium heat, turning often.
Sprinkle soy sauce, sesame oil, and desired amount of ramen seasoning packets over noodles, and toss to coat.
Add vegetables, and continue cooking, turning often,another 5 minutes
