Ingredients

  • BRANDY SAUCE:
  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 1/2 cups toasted bread crumbs from firm-type bread
  • 1 1/2 cups apples, chopped
  • 1 cup dates, chopped
  • 1 cup mixed candied fruits and peels
  • 1/2 cup walnuts, chopped
  • 4 tablespoons rum
  • Brandy or hard sauce, recipes below
  • 1/2 cup butter
  • 2 cups sifted confectioners' sugar
  • 2 egg yolks
  • 1/2 cup heavy cream
  • 2 tablespoons brandy or bourbon
  • HARD SAUCE:
  • 1/2 cup butter
  • 2 cups confectioners' sugar
  • 1 tablespoon brandy, bourbon, or vanilla

Step 1

Cream together butter and sugar. Add egg and beat well. Stir in milk and add the next 9 ingredients. Turn into a greased 1 1/2 quart mold. Cover with a greased tightly fitting lid or with foil held in place with string. Place mold on a rack in a large deep pan. Pour in enough water to cover bottom half of the mold; cover. Simmer over low heat 4 hours, adding more water to pan as needed. Serve warm with brandy sauce or hard sauce.

Brandy Sauce:

Cream butter and sugar and beat until light. Add egg yolks and beat until thick and lemon-colored. Beat in cream. Cook over simmering water for 6 minutes, stirring constantly. Add brandy or bourbon and serve warm over warm pudding. Makes 2 1/2 cups.

Hard Sauce:

Cream butter and add sugar gradually, beating until light and fluffy. Beat in flavoring. Makes 1 1/2 cups. Refrigerate. Serve with warm pudding.
