Blueberry Oat Pancake

  • 1 cup old fashioned rolled oats
  • 1/2 cup low fat cottage cheese
  • 2 large eggs
  • 1 T maple syrup
  • 1 tsp vanilla
  • 1 cup blueberries fresh or frozen, thawed



Step 1

In a blender combine 1 cup old-fashioned rolled oats with 1/2 c low-fat cottage cheese,2 large eggs, 1 T maple syrup and 1 tsp vanilla. Blend until smooth. Transfer to another container. Gently stir in 1 c blueberries[fresh or frozen,thawed]. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Spoon about 2 T batter per pancake into pan. Cook for 3 minutes or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over; cook for 3 more minutes or until golden.
