Ingredients

  • 6 Sweet Potatoes, med. Size
  • 1/3 c Firmly packed Brown Sugar
  • 1/2 c Sugar
  • 2 T Flour
  • 1 t Cinnamon
  • 1/4 t Nutmeg
  • 1/4 t Allspice
  • 3/4 c Pineapple Juice
  • 1/3 c Light Corn Syrup
  • 2 T Orange Juice
  • 1/4 c Butter
  • 1/2 c Pecans, Chopped

Step 1

1. Cook sweet potatoes in boiling water. Let cool, peel and cut into ¼ in. rounds. Set aside.

2. In saucepan, combine sugar, flour, cinnamon, nutmeg and allspice. Stir in pineapple juice, corn syrup, orange juice and butter. Cook over med. heat about 10 minutes.

3. Place half of sweet potatoes in greased 9 x 13 baking dish. Pour half of sugar mixture over potatoes. Repeat for second layer. Sprinkle with pecans.

4. Bake at 350 deg. For 30 minutes.
