Rich Beef and Noodle Pho with Lime and Bean Sprouts

- 16 ounces shirataki noodles
- 40 ounces (5 cups) low-fat, low-sodium chicken broth.
- 4 tsp agave nectar
- 1/2 cup chopped fresh basil
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions (white and green parts)
- 2 limes
- salt
- freshly ground black pepper
- 8 ounces lean beef tenderloin, trimmed of all visible fat
- 2 tsp garlic-chili sauce
- 2 cups bean sprouts

Step 1
1. To prepare the shiratake noodles, drain and rinse under hot water. Drain any remaining liquid.
2. In a large pot over medium-high heat, bring chicken broth to a boil. Add the noodles and cook, about 2 minutes. Turn the heat to low and add the agave, basil, cilantro and green onions. Cut one of the limes in half and squeeze the juice into the pot. Stir to combine. Season with salt and pepper to taste.
3. Slice the beef into very thin slices.
4. Divide the beef among 4 bowls. Ladle the hot soup into the bowls over the beef.
5. Cut the remaining lime into 4 wedges. Serve the soup with garlic-chili sauce, bean sprouts, and lime wedges.
Tip, to make soup extra spicy add a teaspoonful of the garlic chili sauce and mix into each serving.
