Ingredients

  • 2 parsley sprigs
  • 2 tbsp. Dijon mustard
  • 1 c. garlic cloves, chopped, minced
  • 1 tsp. fresh lemon peel, grated
  • 1/2 tsp. dried rosemary, crushed
  • 16 oz. lamb chops
  • 2 tbsp. fresh lemon juice
  • 1 soybean oil cooking spray
  • 1 medium lemon, quartered

Preparation

Step 1

1. In a small bowl, stir together the parsley, mustard, garlic, lemon zest and rosemary.

2. Put the lamb chops in a shallow pan, such as a pie pan or a 9 inch baking pan.

3. Spoon the lemon juice over the chops, and let stand for 15 min.

4. Meanwhile, preheat the broiler, spray the broiler pan and rack with vegetable oil spray.

5. Put the lamb chops on the prepared rack, and spoon half of the mustard mixture evenly over the chops.

6. Broil the chops about 4 inches from the heat for 4 min, then turn and spoon the remaining mustard mixture evenly over the chops.

7. Broil for 4 to 5 min or until slightly pink in the center.

8. Serve with lemon wedges.
