Beef Cabbage Rolls w/ Beer

Ingredients

  • 12 oz. lean ground beef
  • 12 oz. lean ground pork
  • 1 med. onion, chopped
  • 1 can tomato sauce, divided
  • 1 tsp. salt
  • 1 tsp. dried thyme
  • 1/4 tsp. black pepper
  • 1 lg. green cabbage
  • 1 bottle (12oz.) beer
  • salt & pepper to taste

Step 1

Combine beef, pork, onion, 1 c. tomato sauce, salt, thyme, and pepper in lg. bowl. Mix well. Pour 1/4 c. tomato sauce into 5 qt. slow cooker, reserving remaining sauce for later use.
Cut core from cabbage and carefully remove leaves. Place a golf-ball size mound of meat mixture into center of lg. cabbage leaf, edges curling upward. Starting w/ the thickest side, fold leaf over meat mixture, burrito-style. Place fold side down into slow cooker. Repeat w/ remaining meat & cabbage leaves, stacking as necessary. Pour beer over cabbage rolls. Cover w/ remaining tomato sauce. Cover; cook on LOW 5 hours.
Halfway through cooking time, push cabbage rolls under broth to submerge them. Season to taste w/ salt & pepper before serving.
