Orange Ginger Beef

Ingredients
- 2 tbsp. minced fresh ginger
- 1 tbsp. garlic
- 1 tsp. black pepper
- 2 tbsp. canola oil
- 1 tbsp. hoisin sauce
- 1 lb. beef cut into strips
- 1 tbsp. cornstarch
- 3/4 cup orange juice
- 2 cups quartered mushrooms
- 2 tbsp. chopped fresh cilantro
- 1 tbsp. grated orang rind

Step 1
In a bowl, combine ginger, garlic, pepper,1 tbsp. of the oil and hoisin sauce. Add beef and stir to coat well. Cover and refrigerate for at least 4 hr.
Drain marinade from beef,discard marinade.Heat a non-stick skillet over medium heat. Add half the beef and saute for 4 minutes or until lightly browned.Transfer to bowl; set aside. Repeat with the remaining beef.
In small bowl, whisk together cornstarch and orange juice.
Add remaining oil to skillet and saute mushrooms for 3-4 minutes or until lightly browned. Return beef and accumulated juices to skillet. Stir in cornstarch mixture and cook, stirring for about 3 minutes or until sauce is thickened. Serve
