CHOCOLATE ZUCCHINI BREAD ( Patty Tite)

Ingredients

• 1 ) 3 eggs
• 2 ) 1 cup vegetable oil
• 3 ) 2 cups sugar
• 4 ) 1 teaspoon vanilla extract
• 5 ) 2 1/2 cups shredded zucchini (peeled) Edit Delete
• 6 ) 2 1/2 cups all purpose flour
• 7 ) 1/2 cup baking cocoa
• 8 ) 1 teaspoon salt
• 9 ) 1 teaspoon baking soda
• 10 ) 1 teaspoon ground cinnamon
• 11 ) 1/4 teaspoon baking powder
• 12 ) 2/3 cup chopped nuts (optional

Preparation

Step 1

In a mixing bowl beat eggs, oil, sugar and vanilla. Stir in zucchini. Combine dry ingredients and add to zucchini mixture. Mix well. Pour into two greased 8x4x2 inch loaf pans. Bake at 325 degrees for 1 hour or until bread test done. Yields = 2 loaves
