Ingredients

  • 3 cups peeled, chopped zucchini
  • 1 lg onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup butter
  • 4 eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup minced fresh parsley
  • 1-1/2 tsp minced fresh basil
  • 1-1/2 tsp minced fresh marjoram
  • 1/2 tsp salt
  • 1/2 cup shredded Monterey Jack cheese

Preparation

Step 1

In a large skillet, saute the zucchini, onion and garlic in butter until tender; set aside. In a large bowl, whisk the eggs, Parmesan cheese, parsley, basil, marjoram and salt. Stir in zucchini mixture and Monterey Jack cheese.

Pour into greased 1 qt baking dish. Bake at 350 deg for 20 to 25 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before serving.
