Zucchini Parmesan Crisps

Ingredients

  • 1 lb zucchini
  • 1/4 cup shredded parmesan (heaping)
  • 1/4 cup panko (heaping)
  • 1 Tbsp olive oil
  • 1/4 tsp kosher salt
  • ground pepper to taste

Preparation

Step 1

1. Preheat oven to 400 degrees. Line 2 baking sheets with foil and spray lightly with vegetable spray.

2. Slice zucchini into 1/4 inch thick rounds. Toss rounds with olive oil. Coat well.

3. Combine the panko, parmesan, salt and pepper. Place the zucchini rounds in the mix and coat each side. Press into the mix to get it to adhere to the zucc. The mix will not completely cover the zucc.

4. Place rounds on baking sheet(s). Sprinkle with remainder of bread crumb mix.

5. Bake for 22-27 minutes, until golden brown. You do NOT need to flip them during cooking, they will get crisp on both sides.
