Corn and Bacon Chowder

Ingredients
- 5 cups corn niblets
- 3/4 cup bacon
- 1/2 cup carrots peeled and diced
- 1/2 cup potato peeled and diced
- 1/4 cup onion finely diced
- 1/4 cup leek white part diced
- 1/4 cup butter
- 1/4 cup parsley chopped
- 1 tsp five spice
- 1/2 cup chardonnay
- 2 cups chicken stock
- 3 cups 35% cream

Preparation
Step 1
1. Seat onion, bacon, five spice and butter in a pan over medium heat to high heat for 2 mins.
2. Add leeks, carrots and potatoes. Sweat for another min., add chardonnay and chicken stock.
3. Bring to a boil and simmer for 5 mins.
4. Add cream and corn, simmer for 30 mins.
5. Finish with parsley, salt and pepper.
