Braised Cabbage with Apples

Ingredients

  • 3 T unsalted butter
  • 1/2 medium white onion, thinly sliced
  • 1 carrot, halved lengthwise and thinly sliced across
  • 2 garlic cloves minced
  • 1 apple, cored and cut into 1/2-inch pieces
  • 1 teaspoon caraway seeds
  • 1 T honey
  • 1 head green, red or Savoy cabbage, cored and chopped
  • 1/2 cup apple cider
  • 2 T apple cider vinegar
  • Salt and pepper

Step 1

In a large sauté pan heat butter over medium-high heat. When butter melts, add onion, carrot, garlic, and apple. Sauté until onions are translucent, about 5 minutes. Add honey and caraway seeds, toss to mix. Add cabbage and apple cider and stir to mix. Cover, stirring occasionally for 15-18 minutes, or until cabbage is soft. Add vinegar and stir uncovered until liquid has evaporated, 2 to 3 minutes. Season with salt and pepper
and serve.
