Pecan Zucchini Bread

Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/4 tsp. baking powder
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream
  • 1 tsp. vanilla extract
  • 2 cups shredded zucchini
  • 1 cup chopped pecans

Preparation

Step 1

In a large bowl, combine the first six ingredients. In another bowl, beat the eggs, oil, sour cream and vanilla. Stir into dry ingredients just until moistened. Fold in zucchini and nuts.

Transfer to two greased 9x5" loaf pans. Bake at 350 for 60-65 mins. or until a toothpick inserted near the center comes out clean. Cool for 15 mins. before removing from pans to wire racks to cool completely.
