Zucchini Gratin

  • 6 T. (3/4 stick) unsalted butter, plus extra to topping
  • 1 lb. yellow onion cut in 1/2 and sliced (2 large)
  • 2 lbs. zucchini, sliced 1/2" thick (4 zucchini)
  • 2 t. salt
  • 1 t. pepper
  • 1/4 t. ground nutmeg
  • 2 T. flour
  • 1 C. hot milk (Fat Free or skim)
  • 3/4 C. fresh bread crumbs
  • 3/4 C. grated Gruyere

Step 1

Preheat oven to 400 degrees
Melt butter in a very large (12")saute pan & cook onions over low heat for 20 min. or till tender but not brown. Add zucchini & cook, covered for 5 min. Add S & P and nutmeg and cook uncovered for 3 more minutes. Stir in flour. Add the hot milk & cook over low heat for a few minutes till it makes a sauce. Pour mixture into an 8x10" baking dish.
Combine bread crumbs & Gruyere & sprinkle on top of zucchini mixture. Dot w/1T.(or more) cut into small bits and bake for 15 min or till bubbly & browned
