Riz A La Portugaise (Rice With Tomatoes, Bacon And Green Pepper)

Ingredients
- 1/4 lb. sliced bacon, cut into one-half-inch lengths
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 2 1/2 c. raw, converted rice
- 1 c. peeled, seeded, diced tomato
- 6 sprigs parsley
- 1 bay leaf
- 1/2 tsp. thyme
- freshly ground pepper
- 4 3/4 c. water
- 2 tsp. salt

Preparation
Step 1
1. Preheat oven to 375 degrees.
2. In a heavy saucepan, sauté the bacon for two to three minutes or until it renders some of its fat. Add the onion and green pepper and cook the mixture, stirring occasionally, until the onion is soft and translucent.
3. Add the rice and stir it with a fork for two minutes to coat it with the fat. Add the tomato, the parsley and bay leaf (tied in a bouquet), the thyme and ground pepper to taste. Pour in the water and add the salt. Bring the mixture to a boil, stirring constantly to avoid scorching.
4. As soon as the mixture boils, cover the pan tightly with the lid and bake for 20 minutes or until the rice is tender. Remove the bouquet garni and fluff the rice with a fork.
