Ingredients
- 1 tablespoon plus 1 tsp olive oil
- 1/4 cup diced pancetta or bacon
- 2 ears of corn
- 1/2 lime juiced
- 1 garlic clove, minced
- 1 jalapeño, finely diced, ribs and seed removed
- 4 basil leaves
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup of thinly sliced red onion
- 1 1/2 cup cherry, pear or grape tomatoes
- 1 avocado chopped

Preparation
Step 1
Heat 1 teaspoon oil in a medium skillet over medium high heat. Add pancetta or bacon and saute until crisp, about 5 minutes, stirring frequently. Using a slotted spoon, transfer to paper towel.
Cut corn off cob. Add to skillet with pancetta drippings and sauté over med high heat until cooked. Set aside to cool.
In a small bowl, whisk remaining oil, lime juice, garlic, jalapeño, basil chopped, salt and pepper to make vinaigrette.
In a large bowl, gently toss pancetta, corn, onion, tomatoes, avocado, and vinaigrette to combine.
