Roasted Halibut with Orange Salsa

Ingredients
- Orange Salsa:
- 1 small red onion, quartered and thinly sliced crosswise
- 1/4 cup(s) fresh lemon juice
- 2 navel oranges, peeled and diced
- 2 pickled jalapeno peppers, chopped
- 1/2 cup(s) fresh cilantro, chopped
- Roasted Halibut:
- 4 piece(s) (3/4-in-thick ) halibut fillet (6 to 8 oz each)
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) pepper
- Olive oil nonstick spray

Preparation
Step 1
Make Orange Salsa: Toss onion with lemon juice in a medium bowl. Let stand at least 30 minutes, then stir in remaining ingredients.
Make Roasted Halibut: Heat oven to 500 degrees F. Line a rimmed baking sheet with foil (for easy cleanup). Place fish on sheet; season with salt and pepper. Coat tops with nonstick cooking spray.
Roast 10 minutes or until cooked through. Serve with Orange Salsa.
