Ingredients
- 1 lb veal cutlets*, pounded until thin
- 1 -1 egg white
- 1/2 -1/2 cup dry bread crumbs
- 1 -1tbsp vegetable oil
- 2 -2 tsp crushed garlic
- 1 -1 cup tomato sauce
- 2 -2 oz goat cheese
- -chopped fresh parsley

Preparation
Step 1
1. Dip veal in egg white, then in bread crumbs until coated.
2. In large non-stick skillet sprayed with non stick vegetable spray, heat oil' saute garlic for 1 minute. Add veal and cook until just tender and browned on both sides. Remove from heat.
3. Place tomato sauce in baking dish. Top with veal and sprinkle with goat cheese. Bake, uncovered for 5 minutes or until heated through. Garnish with parsley.
