  • 2 Pounds squash
  • 1 eggs -- beaten
  • 1/2 cup bread crumbs
  • 1/2 stick butter
  • 1/8 cup sugar
  • salt -- to taste
  • 1/2 cup onion -- chopped
  • dash pepper

Step 1





Cut each squash into 3-4 pieces. Drop into enough boiling water to cover. Add onions.

Return to boil, reduce heat and cook until tender. Drain and mash.

Combine with beaten eggs, bread crumbs, butter, sugar, salt and pepper.

Spray 3 quart casserole with non stick spray. Add squash. Cover with light layer of bread crumbs.

Bake 350 for 20 -25 minutes until lightly browned.
