Salmon with Ginger Lime butter

Ingredients
- 500 grams salmon fillet
- 15 ml olive oil
- 25 ml butter
- 5 ml ground ginger, or
- 15 ml fresh ginger, finely chopped
- 1/2 lime, juice and rind, grated
- Pinch of salt
- Pinch of pepper

Preparation
Step 1
In food processor or by hand, cream butter, ginger and lime juice and rind. Reserve until needed. With a sharp knife angled parallel to the skin, slice salmon into 4 steaks starting at tail end. Line baking sheet with parchment paper or foil. Place salmon on top and brush with oil. Broil salmon 6" from heat for 3 minutes on one side and 2-3 minutes on the other or until while juices dot the salmon and it flakes when a folk is inserted. Sprinkle with salt and pepper. Top with ginger lime butter.
