Ingredients

  • 3/4 cups low fat milk
  • 1/2 cup natural applesauce
  • 1/4 cup healthy egg substitute
  • 1 1/2 cups flour
  • 1/2 cup oat bran
  • 1/2 cup rolled oats
  • 1/2 cup dark brown sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup fresh blueberries

Preparation

Step 1

Combine milk, applesauce, and egg; set aside. Combine flour, oat bran, rolled oats, sugar, baking powder, salt and cinnamon. Stir wet ingredients into dry, just until combined. Gently fold in blueberries.

Pour batter into greased muffin tin. Sprinkle muffins with a bit of cinnamon/sugar if desired.

Bake at 400° for 20 minutes or until golden brown.
