Mashed Potatoe Candy

Ingredients

• 1 medium potatoe
• 1 2 lb bag confectioner sugar
• 2 tsp vanilla flavoring

Preparation

Step 1

Peel and boil potatoe. Cut in half to test doneness. Place tender potatoe in bowl. add 1 tsp vanilla. Gradually add confectioner's sugar until formed into soft ball.

knead by hand until ball is stiff and dry. Roll out as flat as possible. Spread peanut butter on top.

Starting at one end roll into log. cut in slices.
