Ingredients

  • 3 eggs
  • 2 c. flour
  • 2 tsp. vanilla
  • 1 c. oil
  • 2 c. shredded zucchini
  • 3 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 c. crushed pineapple (drain it some)
  • 1/2 c. raisins
  • 1 c. walnuts finely chopped

Preparation

Step 1

Preheat oven to 325 degrees.

Mix ingredients and pour into 2 loaf pans.

Bake for 1 to 1 1/2 hours until golden brown.

Cool completely and serve.
