Pork Chops with Apple Raisin Sauce

Ingredients

  • 4 golden apples, cored and cubed
  • 1 cup apple cider
  • 3 tbsp brown sugar
  • 1 cup golden raisins
  • 1 tsp cinnamon
  • 4 large, center-cut pork chops, 1 1/2 inch thick
  • Salt/pepper
  • 2 tbsp EVOO
  • 2 tbsp Dijon mustard
  • 1/4 cup maple syrup

Preparation

Step 1

In a medium pot, add apples, cider, brown sugar, raisins and cinnamon. Cook over medium-high heat until tender, about 12 minutes.

Season pork chops with salt a pepper. Heat oil in a skillet over medium heat and cook the pork chops 7-8 minutes on each side or until cooked through. Once chops are cooked, add the mustard and syrup. Glaze for 1 minute. Serve topped with apple-raisin sauce.
