Beef BBQ Sloppy Joe w/Cornbread
- 2 cups frozen pepper stir fry mix
- 1 lb ground beef
- 1 can sloppy joe sauce (15.5 oz)
- ¼ c bottled barbecue sauce
- 1 pkg. (8.5 oz) corn muffin mix like Jiffy
- 1 egg
- 1/3 c water
Preparation time 10mins
Cooking time 30mins
Preheat oven to 400, Coat 1 ½ qt. baking dish and large nonstick skillet with cooking spray.
Heat skillet over medium high heat.
Add 1 ½ cups pepper mix; cook until softened, 3 – 4 minutes.
Add beef; cook, stirring until browned.
Drain excess fat.
Stir sloppy joe and barbecue sauces into beef mixture; cook until thickened, about 3 minutes.
Transfer to baking dish.
In bowl, whisk muffin mix, egg, and 1/3 c water until combined; pour over beef mixture. Top with remaining ½ c pepper mix. Bake until cornbread is golden, 20 minutes.
