Ingredients

  • 2 cups all purpose flour
  • 1 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup half and half
  • 1/2 cup vegetable oil
  • 1 tsp lemon extract
  • 1 cup fres or frozen unsweetened raspberries ( if using frozen do not thaw before adding to batter.

Preparation

Step 1

In large bowl combine the flous, sugar, baking powder and salt, In another bowl combine eggs, cream, oil and extract. Stir into dry ingredients jut until moistened. Fold in raspberries. Fill greasd jumbo muffin cups 2/3 full. Bake at 400 for 22 -25 minutes. Cool for 5 minutes before removing from pan to a wire rack. ****NOTE**** If using regular Muffin Tins bake 18-20 minutes.
