Ingredients

  • 3 lbs Yukon Gold potatoes
  • 1/2 C fresh squeezed lemon juice (3-4 lemons)
  • 1/3 C olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 14.5 oz chicken broth

Preparation

Step 1

1. Peel potatoes and cut into large chunks.
2. Let the potatoes stand in water while preparing the sauce.
3. Combine all other ingredients in a large ziploc bag and shake to mix.
4. Add the potatoes to the bag and let marinate for 2 hours.
5. Preheat oven to 400.
6. Put the potatoes in a 13 x 9 pyrex casserole.
7. Roast potatoes for 1 hour and 10 minutes, turning occasionally.
