Grilled Sausage with Summer Squash, Fresh Herbs & Olives

Ingredients

  • 1 1/2 lb mix summer squash, cut into 1" chunks
  • 2 T olive oil
  • Salt & pepper
  • 1 lb Italian sausage links
  • 1/2 C mixed herbs, cilantro, parsley, mint & chopped basil
  • 1/3 C halved Kalamata olives
  • 1 T capers
  • Squeeze of lemon juice

Cooking time 20mins

Preparation

Step 1

Light grill to med-hot. Toss squash with olive oil; season with salt & pepper.
Grill squash & sausage, turning frequently, until squash is tender & sausage is cooked thru., 8-12 min. Cut sausage into 1" chunks. Toss squash & sausage with herbs, olives & capers.
Season with lemon juice, salt & pepper
