Beef and Broccoli Stir-Fry with Orange & Chilli

Nice twist on a traditional beef & broccoli. I like it served with udon or egg noodles, but it could be served with rice instead.

Ingredients
- 600 g extra-lean beef escalopes or sirloin steak
- 1 red chilli (or 2 frozen cubes of red chilli, if available)
- 2 clove garlic, minced
- 2 handfuls flat-leaf parsley, finely chopped
- Zest and juice of 2 oranges
- 400 g small broccoli florets
- 4 tsp soy sauce
- 1 package udon noodles, egg noodles or rice (to serve 4)

Preparation
Step 1
Deseed and finely chop chilli. Combine chilli with garlic, parsley, orange zest and juice. Set aside. Cook the noodles according to the package and set aside.
Thinly slice steak across the grain. Heat a wok and spray with cooking spray. When hot, add beef and stir fry until just cooked through. Tip onto a plate, cover and keep warm.
Add the broccoli to the wok with the orange juice mixture and a splash of water. Cover and steam for a few minutes until tender. Return the beef to the wok and stir in the soy sauce, and cooked noodles (if using).
