Prawns With Lemon, Chili, Garlic & Feta

Ingredients

  • 12 Long Wooden Skewers, soaked in water for 30 min.
  • 36 Lg. Tiger Prawns, uncooked with heads removed
  • 2 Garlic Cloves, peeled & crushed
  • 1 Lg. Chili, de-seeded & finely chopped
  • 4 Tbsp. Olive Oil
  • Zest & Juice of 2 Lemons
  • 1 Sm. Bunch Italian Flat-Leaf Parsley
  • 150 g Greek Feta, crumbled

Preparation

Step 1

Remove the shells from the prawns but leave the tails intact. Mix the garlic, chili, olive oil, lemon zest & juice, & half the parsley. Mix well & reserve half the mixture for the dressing. Put the remaining half of the marinade in a bowl with the prawns. Mix well, cover & put in the fridge for one hour. Thread three prawns on to each skewer & cook on a hot barbeque for 5 min. on each side till the prawns turn pink. Pour over the reserved marinade & scatter over the feta & remaining parsley.
