Zucchini Cookies

Zucchini cookie may sound a bit odd for some but the cookies are bomb! They are so good they will have you coming back for more!

Ingredients

• COOKIE
• 3/4 cup butter
• 3/4 cup sugar
• 1 egg
• 1 teaspoon lemon extract
• 1 teaspoon lemon peel
• 1 cup grated zucchini
• 4 ounce slivered almonds
• 2 cup flour
• 1/2 teaspoon salt
• 1 1/2 teaspoons baking powder
• GLAZE
• 3/4 cup powdered sugar
• 1 tablespoon lemon juice
• 1/2 teaspoon lemon peel

Preparation

Step 1

For the cookies mix all ingredients together. Make small spoonfuls and place on a baking pan.

BAKE 350° Fahrenheit for 9-10 minutes. Cool for 1 minute, then spread with glaze.
